Ingredients

- 1 red onion, chopped
- 2 cloves of garlic, chopped
- ½ tbsp ground cumin
- 1 green chilli
- ¼ tsp cayenne chilli pepper
- sea salt to taste
- olive oil for cooking
- 1 tin black beans drained and rinsed
- 400g cherry tomatoes halved (or 1 tin chopped tomatoes)
Instructions
- Cook the onion, garlic, cumin, chilli (remove the seeds if you don’t want it too spicy), cayenne pepper and sea salt in olive oil until the onion has softened.
- Add cherry tomatoes and black beans. Leave to simmer until the tomatoes break down. Add a small amount of water if necessary.
