- 100g smoked salmon
- 1 bag (115g) baby spinach
- 1 avocado
- 1 small bunch asparagus
- 1 red pepper
- extra virgin olive oil
- 1 lemon
Instructions
- Griddle the asparagus.
- In the meantime, prepare the rest of the salad
- Wash the baby spinach and add to a salad bowl
- Finely slice the red pepper and scatter over
- Half the avocado and scoop the flesh into the bowl
- Scatter over the asparagus
- Dress the salad with a drizzle of olive oil and squeeze over the lemon to make a fresh zingy dressing
- Place the smoked salmon over the salad in waves and serve
