Simple Smoked Salmon Salad

This simple smoked salmon salad is quick and easy to make. Salmon has a number of properties that support skin health including vitamin A, omega 3, selenium and vitamin D. Asparagus is a good source of selenium which has powerful antioxidant properties and is important in protecting collagen fibres that can help mitigate the inflammatory response in some skin issues such as eczema and acne.

Ingredients

Scale
  • 100g smoked salmon
  • 1 bag (115g) baby spinach
  • 1 avocado
  • 1 small bunch asparagus
  • 1 red pepper
  • extra virgin olive oil
  • 1 lemon

Instructions

  • Griddle the asparagus.
  • In the meantime, prepare the rest of the salad
  • Wash the baby spinach and add to a salad bowl
  • Finely slice the red pepper and scatter over
  • Half the avocado and scoop the flesh into the bowl
  •  Scatter over the asparagus
  • Dress the salad with a drizzle of olive oil and squeeze over the lemon to make a fresh zingy dressing
  • Place the smoked salmon over the salad in waves and serve
