- 2 cooked salmon fillets
- 250g cooked puy lentils
- 200g tenderstem broccoli
- 1 tsp dijon mustard
- 200ml extra virgin olive oil
- 1 tsp apple cider vinegar
- 1 clove crushed garlic
- 2 chopped shallots
Instructions
- Blanch the broccoli by submerging in boiling water for a couple of minutes, then rinsing in cold water, drain and set aside.
- Make the dressing by combining the olive oil, mustard, garlic, vinegar, shallots and salt and pepper.
- Arrange the lentils and broccoli in a bowl and stir through the dressing, flake the salmon into it.
