Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 3 cups baby spinach, chopped
- ½ cup feta, crumbled
- 1 cup pitted olives, halved
- 1 cup chickpeas, drained and rinsed
- 4 tbsp extra virgin olive oil
- Juice of 1 lemon
- 1 tbsp oregano
- Salt and Pepper
Instructions
- Place quinoa and 2 cups of cold water in a saucepan
- Bring to the boil. Reduce heat to low. Simmer for 10 – 12mins or until water has been absorbed. Drain, rinse with water.
- Put cooled quinoa in mixing bowl
- Add cherry tomatoes, cucumber, spinach, feta, olives, chickpeas
- In a separate small bowl, whisk together olive oil, lemon juice, oregano, salt, pepper
- Pour dressing over salad and serve
