Christmas Berry Puddings – Christmas with Sano

Made with ground almonds, orange, cinnamon and goji berries they are festive and won’t send your blood sugar levels swinging like a pendulum. ⁠

Ingredients

Scale
  • 3 cups ground almonds⁠
  • 1 tsp Himalayan salt⁠
  • ½ tsp baking powder⁠
  • ¼ cup coconut oil⁠ (melted)
  • 2 tbsp honey⁠
  • juice and zest of 1 orange or lemon⁠
  • ½ tsp vanilla extract⁠
  • 2 medium eggs⁠
  • 4 tsp ground cinnamon⁠
  • 80g goji berries⁠
  • 50g chopped dark chocolate⁠ (min 75%)
  • 30g melted dark chocolate for decoration (optional)⁠

Instructions

  • Preheat the oven to 160℃.
  • Combine all ingredients in a large bowl⁠.
  • Scoop batter onto a tray lined with greaseproof paper using a small ice-cream scoop⁠.
  • Bake for 20 minutes⁠.
  • Once cooled melt 30g of dark chocolate and pipe over the puddings⁠.
