Chia Pudding with Berries & Pomegranate

This chia pudding is a great breakfast for those on the go, giving the possibility of a 14-hour overnight fast and rest for the body’s digestive processes. The chia and almond milk provides high protein content, thereby slowing the after-meal blood sugar spike and increasing satiety. The berries offer a low glycaemic load, high fibre and a vitamin-rich tasty mix.

Ingredients

  • 2 tbsp chia seeds
  • ¼ tsp vanilla powder
  • 125ml almond milk (homemade)
  • 1 tbsp sheep’s yoghurt
  • A handful of fresh mixed berries
  • Pomegranate seeds

Instructions

  • Put the chia seeds, vanilla powder and yoghurt into the bottom of a jar
  • Add the milk and place the lid on the jar
  • Shake well and put in the fridge for 6-8 hours or overnight
  • Top with pomegranate seeds and fresh berries
