- 250g unsweetened almond milk
- 1 tablespoon Rooibos Tea (vanilla flavoured)*
- 30g GF oat flakes
- 2 tsp chia seeds
- 1 tsp flaxseeds
- 1 pitted and finely chopped Medjool date
Toppings
- 4 walnut halves, toasted
- 4 blackberries
- 1–2 tbsp almond cream
*I tear open 2-3 teabags, be sure to use a flavoured sweet tea that you like as this is the dominant flavour in the pudding. Chai tea is another option
Instructions
- Heat the almond milk and tea leaves in a saucepan to simmering point, then simmer for 1 minute
- Place the oats, chia, flax seeds and date in your serving cup and stir to combine
- Use a strainer and pour the almond milk into the heatproof serving cup
- Stir the milk through the other ingredients in the cup until combined
- Leave to soak for 10 minutes or until it turns into a gel-like texture
- Top with the walnuts, berries and almond cream and serve
