Christmas Berry Puddings – Christmas with Sano
Made with ground almonds, orange, cinnamon and goji berries they are festive and won’t send your blood sugar levels swinging like a pendulum.

Ingredients

- 3 cups ground almonds
- 1 tsp Himalayan salt
- ½ tsp baking powder
- ¼ cup coconut oil (melted)
- 2 tbsp honey
- juice and zest of 1 orange or lemon
- ½ tsp vanilla extract
- 2 medium eggs
- 4 tsp ground cinnamon
- 80g goji berries
- 50g chopped dark chocolate (min 75%)
- 30g melted dark chocolate for decoration (optional)
Instructions
- Preheat the oven to 160℃.
- Combine all ingredients in a large bowl.
- Scoop batter onto a tray lined with greaseproof paper using a small ice-cream scoop.
- Bake for 20 minutes.
- Once cooled melt 30g of dark chocolate and pipe over the puddings.
