Chia, Oat & Flaxseed Pudding

Chia, oat & dates all contain beta-glucan, a soluble dietary fibre, which helps with the movement of chyme (digested food) from the stomach into the small intestine and into the large intestine and is beneficial for bloating and constipation.

Chia, Oat & Flaxseed Pudding

Chia, oat & dates all contain beta-glucan, a soluble dietary fibre, which helps with the movement of chyme (digested food) from the stomach into the small intestine and into the large intestine and is beneficial for bloating and constipation.

Ingredients

Scale
  • 250g unsweetened almond milk
  • 1 tablespoon Rooibos Tea (vanilla flavoured)*
  • 30g GF oat flakes
  • 2 tsp chia seeds
  • 1 tsp flaxseeds
  • 1 pitted and finely chopped Medjool date

Toppings

  • 4 walnut halves, toasted
  • 4 blackberries
  • 12 tbsp almond cream

*I tear open 2-3 teabags, be sure to use a flavoured sweet tea that you like as this is the dominant flavour in the pudding. Chai tea is another option

Instructions

  • Heat the almond milk and tea leaves in a saucepan to simmering point, then simmer for 1 minute
  • Place the oats, chia, flax seeds and date in your serving cup and stir to combine
  • Use a strainer and pour the almond milk into the heatproof serving cup
  • Stir the milk through the other ingredients in the cup until combined
  • Leave to soak for 10 minutes or until it turns into a gel-like texture
  • Top with the walnuts, berries and almond cream and serve
